Whipped Ricotta Pots with Salted Chocolate Caramel and Biscotti


This dessert is the perfect blend of indulgence and elegance, bringing together the creamy richness of whipped ricotta, the decadence of salted chocolate caramel, and the delightful crunch of biscotti - all crowned with the freshness of berries and a touch of vanilla. Ingredients:

  • 40-60ml of milk ( of your choice) just to adjust the consistency

For the Salted Chocolate Caramel:

  • 2-3 quality store-bought biscotti or hazelnut wafers also work perfectly!

  • Or, make your own if you're feeling ambitious!

For Garnish:

  • Fresh berries (think raspberries, strawberries, and blueberries)

  • A drizzle of honey or maple syrup (optional)

Method:

  1. Whip the Ricotta:

    • Place the ricotta, honey, and vanilla bean paste into a bowl. Using a food processor or a whisk, beat until the ricotta is smooth and fluffy, about 5 minutes. Once most of the lumps are gone, pour in the milk and continue to mix until extremely smooth.The texture should be light and airy—like a soft cloud in your spoon. Taste and adjust the sweetness if needed.

  2. Assemble the Pots:

    • Spoon a generous amount of whipped ricotta into the bottom of each serving glass or jar.

    • Drizzle the salted chocolate caramel over the ricotta - don't be shy, this is the good stuff!

    • Break the biscotti into small pieces and layer them on top for that lovely crunch.

  3. Finish with Fresh Berries:

    • Top each pot with a handful of fresh berries. The mix of tart and sweet will balance out the richness perfectly.

    • Optionally, drizzle a little honey or maple syrup on top for an extra touch of sweetness.

  4. Chill & Serve:

    • Chill the pots in the fridge for about 30 minutes to let the flavours meld together.

    • Serve with a final flourish - perhaps a sprig of mint, a dusting of cocoa powder, or even a little more caramel drizzle if you're feeling extra fancy.
